Delicious potatoes rendered in duck fat, mushrooms simmered in thyme, rosemary, crispy onion, scallions and yuzu, a roast pork sandwich with fennel, anchovy, gochujang, provolone, braised greens, marinated hot peppers and a yuzu aioli, are just a few of the small plates on the menu at the recently opened Hollow cocktail bar and restaurant in Delhi, New York. The sign is subtle. The door, which is located on Division Street off of Main Street, is almost easy to miss.
